Top Tip: For a diabetic-friendly topping, use sweet potatoes instead of white potatoes and reduce the amount of oil or margarine.
Top Tip 2: If you want to cook your lentils from scratch (instead of using tinned), use 250g of dry green lentils and cook them according to packet instructions. When they are ready, this will give you approximately 400g cooked lentils that you can use instead of veggie mince.
