When Greeks Meet Italians Pizza

Ingredients

230g
store bought pizza dough
58g (1/2 cup)
200g (1 1/4 cups)
35g (1/4 cup)
Sea Salt and Black Pepper, to taste
10g (1/2 cup)

Method

Preheat the oven to 275°C (Gas Mark 11, 525°F) — don’t freak about the high heat (if your oven doesn’t reach this high, just make it as high as possible!) — this will help the pizza be perfect, crunchy and cooked throughout.

Using a rolling pin, roll out the dough to a thickness of 1/8 to ¼ inch thick. Spread the sauce over the dough to within ½ inch of the edge to leave a crust. Top with mozzarella, onion, garlic, olives, capers and cherry tomatoes. Press a fork all the way around the crust, leaving an imprint, then brush with olive oil.

Bake for about 12 minutes, turning the baking tray halfway through the cooking time. Keep an eye on the crust; you want it to be golden, not burnt! Before eating, sprinkle with salt, pepper, nutritional yeast and rocket.
