White Chocolate Mousse

To make the mousse, whisk the aquafaba until stiff peaks with an electric whisk, this may take 5-6 minutes. Once the aquafaba is whipped fold it through the melted chocolate being careful not to knock too much air out. Into a glass add the crushed biscuit, top with the mousse and allow to set for 3-4 hours in the fridge, top with the raspberries and freeze-dried raspberries.
