Place the potatoes into a pan, cover with water and bring to the boil. Cook for 10-15 minutes until the potatoes are cooked through but not too soft.
Preheat the oven to 200°C/400°F/Gas 6.
Place the potatoes onto a baking tray and crush each one slightly, drizzle with olive oil and sprinkle with za’atar. Place into the oven to roast for roughly 30 minutes, until the potatoes and golden and crisp.
